Zucchini Fritters

4 cups coarsely grated zucchini
1 cup grated pecorino cheese
1 cup cornstarch OR
3/4 cup cornstarch and
1/4 cup flour
baking powder
coarse sea salt
1 or 2 chopped scallion
1/2 cup chopped parsley
oregano, pepper, hot red pepper flakes, salt to taste
1 egg
milk to taste

combine the zucchini and salt; let stand for 15 min.
separately, combine the other ingredients.

Combine the zucchini with the rest of the fritter batter,
and form into small pieces with a tablespoon. Drop into
350-degree vegetable oil in a deep frying pan, and fry
until golden-brown and crisp (approx. 1 min). Drain and
let cool.

The same mixture can also be baked in a shallow muffin pan, at 375 degrees
for about 45 minutes.
