spinach-and-tofu curry

5c spinach
10.5 oz tofu light
1/2 lg onion
2 garlic cloves

seasoning:
1 tbsp oyster sauce
1/2 tsp sea salt
black pepper
2 tbsp curry powder
1 1/2 tsp cumin (optional)
1/2 c water
1 tsp lemon juice
4c long-grain brown rice

1. Sautee spinach in canola skillet for 1 min; set aside.
2. Mash tofu with fork
3. wok and canola: onion, garlic; stir-fry for 3 mins
4. combine seasoning in bowl. Add tofu to wok, and cook for 4 min until dry.
5. Add spinach and seasoning, and cook until liquid evaporates.
6. Sprinkle lemon juice; serve with rice.
