Displaying potato salad recipe

1 1/2 pounds new potatoes
1/2 pound green beans
1/4 pound yellow wax beans

salt
italian (flat-leaf) parsley
1/4 cup seeded dijon mustard

dressing:
2 tsp minced shallot
1/4 cup white-wine vinegar
1/8 cup olive oil
capers

Dice and parboil the potatoes, still in their skin.
Bring a shallow saucepan of salted water to boil, and cook the beans
until brightly-coloured.

Toss with chopped parsley, mustard, and dressing.
