Displaying lentil soup with herbed yogurt recipe

LENTIL SOUP

2 tsp olive oil
2 med onions
3 cloves garlic
2 carrots
1 stalk celery
1 small potato
12 oz dried lentils
8c broth (veg- or chicken-based)
1/2c cooking wine

curry powder
salt
pepper

Chop the carrots, celery, and onions; mince the garlic. Add to heated
oil and cook until the vegetables are soft (approx 10 mins); add 3 tsp
curry powder, wine, lentils; cook another couple of minutes, then add
the broth. Bring to boil, cover, and simmer until the lentils are
tender. Salt and pepper to taste.

HERBED YOGURT

1 1/2 c yogurt
1/4 c chopped mint
1/4 c chopped cilantro

whisk together ingredients, add salt and pepper to taste. Chill.

Serve lentil soup with dollops of yogurt on top.
