Displaying gajar athano recipe

Gajar Athano( Carrot Pickle):

2 to 3 medium size carrots
1 bunch corriender parsley
2 hot peppers
1 bell pepper
1 tea spoon finely chopped fresh ginger root
fresh garlic( 2 cloves)pressed.
juice of 1 lemon/lemon
1/4 teaspoon chilli powder
salt to taste.

Wash the carrots and scrape them of any dirt .

Cut them into thin strips ( about 2 inches long)
Cut hot pepper and bell pepper into thin strips also.

In a small mixing bowl, mix together two table spoons cooking oil, juice of
1 lemon, turmeric, salt and chilli powder.

Wash parsley carefully and chop it finely into the above mix.

Add very finely grated ginger and two cloves of fresh garlic.

Stir the carrots and thinly cut strips of hot pepper and bell pepper into
the mix and let them stand over night in a bowl covered with saran wrap or
put it in a jar and cover it.
