Displaying coconut carrot cake recipe

2 c granulated sugar
1 1/2 c vegetable oil
4 eggs, large
2 c flour
2 tsp baking soda
2 tsp ground cinnamon
1 sp salt
2 c shredded carrot
8 oz crushed pineapple (drained)
1 c chopped walnuts
raisins are good
shredded coconut

grease and flour 2 pans -- layer cake, loaf, springform. Preheat oven to 350 F.

Mix together sugar, oil, and eggs until smooth; add flour, baking soda, cinnamon, and salt.
Stir in carrots, pineapple, walnuts, coconut, and raisins. Pour batter into pans, and bake 60 to 70 mins.

Makes 2 loaves.
